Cook quickly in a very hot pan, or low and slow to soften the meat. If it stays rubbery, slice it again to thin it out.
Wait until 12 months, as octopus is high in sodium and moderate in mercury. Cooked octopus is firm and can be rubbery, so slice lengthwise so pieces are never round.
Cook until tender, then slice the arms lengthwise into matchstick shapes. If rubbery, slice again vertically.
