6-9 months

Prep:

Fold minced fresh chives or chive flowers into soft, scoopable foods like congee, frittata, mashed vegetables, or yogurt.

Cut:

Minced fine, mixed into soft food.

9-12 months

Prep:

Boost herbs at this stage. Use chives liberally in scrambled eggs, on toast with mascarpone, or stirred into noodles and grains.

Cut:

Minced or in small pieces, mixed into food.

12-18 months

Prep:

Use chives in dumplings, eggs, lentil salads, meatballs, quick breads, and noodles, or as a bright garnish on spreads and finished dishes.

Cut:

Chopped or whole stalks; remove very long pieces.
