How to prepare each food

Plantain

Prep

Plantain is always cooked, never raw. Boil, steam, or roast a ripe plantain until very soft, then mash to a smooth purée or offer a finger-length piece soft enough to squish between two fingers. Skip salt and added sugar.

Cut

Smooth mash, or a soft finger-length piece that squishes easily.

Note

Underripe or undercooked plantain stays firm and dense. Cook it until soft enough to squish between two fingers, and keep pieces small so it stays easy to manage.

Masa harina

Prep

Mix with water to form dough. Cook on a skillet until fully set and slightly browned.

Cut

Serve as thick pieces for easy holding.

Olive oil

Prep

Stir a small drizzle of olive oil into a smooth purée or soft mash to add calories and richness. Use it as a cooking fat for vegetables or grains, or fold a little into the finished food just before serving.

Cut

No cutting needed. Mix a small amount evenly through the food.

Putting it together

Soft bites of mashed ripe plantain and corn flour mixed with your choice of cooked protein, air-fried or baked into finger-sized pieces.
