How to prepare each food

Cauliflower

Prep

Steam, roast, or boil cauliflower until very soft, until a fork slides through with no resistance. A whole soft floret with its stalk gives baby a built-in handle to hold. You can also mash it or blend it into a smooth purée. Serve plain and warm, with no added salt.

A soft floret with the stalk as a handle, or mashed/smooth purée.

Chickpea

Prep

Cook chickpeas until fully soft, then mash or flatten them well. A smooth no-salt hummus-style mash works nicely, or stir the mash into other purées. Never offer a whole, intact chickpea at this stage.

Cut

Smooth mash, or each chickpea flattened.

Note

A whole, intact chickpea is a choking hazard because of its round, firm shape. Mash or flatten each one until it's soft and no longer rounded. Don't offer whole chickpeas to babies and young children.

Egg

Prep

Hard-cook the egg until both white and yolk are solid, then mash it smooth, or offer a well-set scramble or a soft omelet. A small amount, about a third of an egg, is plenty for a first taste.

Cut

Serve as a smooth mash, soft scramble curds, or finely chopped omelet strips.

Cheese

Prep

Use pasteurized, full-fat cheese and offer it finely grated or as a thin smear rather than in pieces. Sprinkle a little grated cheese over soft vegetables or stir it into mash or a soft pasta so it melts in. Choose a mild, lower-salt cheese where you can.

Cut

Finely grated or a thin smear stirred through food; never cubes.

Note

A chunk or firm cube of cheese can block a small airway. Serve cheese finely grated, as a thin smear, or in thin soft strips, and avoid large firm pieces.
